Chill Out Gazpacho

I’ve been making this fat free, low cal, fiber and vitamin rich, delicious soup for years. You can serve it in cups, bowls, or champagne glasses. It’s a great start for a summer meal.

1 medium onion, chopped
2 cucumbers, peeled and chopped
2 peeled tomatoes, chopped
1/2 green pepper, chopped
2 cans family size (28 oz.) tomato sauce
1 can beef bouillon or 1 bouillon cube dissolved in 1 cup hot water
1/4 cup vinegar
1/3 cup water
dash or more Tabasco
Salt and pepper to taste

Mix all ingredients together and let stand covered in refrigerator for 24 hours. Lasts several days in refrigerator.

Note: I make 1/2 a recipe to serve at least six.
