Baked Chicken Czardas

This is an old recipe of mine that fell out of my recipe box. I took this as a sign that you would like it. It’s really easy after you get that nasty chicken browning thing accomplished. Enjoy!

2 cut up frying chickens
4 Tbs. butter or margarine
1 small onion, minced
3 Tbs. flour
1 cup sour cream
1 28 oz. can chopped tomatoes
1 tsp. paprika
1 tsp. grated lemon rind
2 Tbs. white wine
1/4 cup grated Parmesan cheese
salt and pepper to taste

Melt butter in large skillet on medium heat. Brown chicken slowly on all sides. Transfer chicken to casserole. Add onion to drippings in skillet and sauté gently for 5 minutes. Blend in flour; add tomatoes and sour cream. Cook, stirring constantly until mixture boils and thickens. Add paprika, lemon rind wine, cheese and salt and pepper. Pour sauce over chicken.

Cover and bake in a 350º oven for 1 hour or until chicken is tender.

Notes: Browning and sauce can be done early in the day. You can also use yogurt and lemon juice instead of sour cream and wine. Add yogurt after the sauce is thickened. You can free the whole thing before baking.
